秈稻品種台中秈10號移植時期與儲存期間對產量性狀與米質影響

摘　　要

　　本 試 驗 旨 在 探 討 不 同 移 植 期 對 台 中 秈 10 號 產 量 性 狀 與 稻 米 理 化 特 性 影 響 及 貯 存 期 間 台 中 秈 10 號 米 飯 食 味 變 化 ， 結 果 發 現 第 一 期 作 台 中 秈 10 號 延 遲 移 植 者 可 提 高 粗 蛋 白 質 含 量 ， 但 在 第 二 期 作 台 中 秈 10 號 之 直 鏈 澱 粉 及 粗 蛋 白 質 含 量 則 隨 移 植 期 延 後 而 降 低 ， 凝 膠 展 延 性 隨 移 植 延 後 而 昇 高 。 而 將 台 中 秈 10 號 以 稻 穀 袋 裝 形 式 貯 存 時 ， 第 一 期 作 儲 存 五 個 月 後 米 質 變 劣 ； 第 二 期 作 則 經 六 個 月 儲 存 米 質 變 劣 。

Influence of Planting Time and Storage on the Yield and Rice Quality of Rice cv. Taichung Sen 10

Summary

　　The purpose of this study was to investigate the effect of planting time and storage on rice quality of rice cv. Taichung Sen 10 in Taichung area. It was found that the protein content of grains increased significantly in response to late planting in the first crop season. The amylose and protein content of grains decreased significantly while gel consistency increased significantly in response to late planting in the second crop season. However, the palatability of cooked rice was worse while it stored at room temperature than stored at 10℃ after harvesting for 5 months of the first crop season and for 6 months of the second crop season.
