巨峰葡萄品質分級之可行性研究

摘　　要

　　本 研 究 主 要 目 的 在 探 討 巨 峰 葡 萄 品 質 分 級 之 可 行 性 。 供 試 葡 萄 分 別 取 自 本 省 巨 峰 葡 萄 主 要 產 地 大 村 、 東 勢 、 卓 蘭 、 新 社 、 信 義 等 地 ， 每 地 各 隨 機 抽 取 50 穗 ， 總 計 250 穗 葡 萄 作 為 供 試 樣 本 。 主 要 分 為 品 質 化 驗 及 官 能 測 定 兩 種 。 品 質 化 驗 項 目 包 括 色 澤 、 粒 徑 、 粒 重 、 硬 度 、 糖 度 、 酸 度 及 糖 酸 比 ； 官 能 測 定 項 目 包 括 外 觀 及 食 味 官 能 測 定 兩 種 。 研 究 結 果 顯 示 ， 不 論 是 經 由 葡 萄 品 質 化 驗 法 或 官 能 測 定 法 ， 已 能 明 顯 分 出 巨 峰 葡 萄 品 質 的 優 劣 。 站 在 品 質 分 級 的 觀 點 而 言 ， 本 研 究 認 為 巨 峰 葡 萄 色 澤 、 粒 徑 (或 粒 重) 、 硬 度 、 糖 度 及 糖 酸 比 等 指 標 ， 都 可 以 做 為 葡 萄 品 質 分 級 標 準 的 指 標 ， 若 再 結 合 外 觀 及 食 味 官 能 測 定 ， 即 能 建 立 一 個 完 善 的 巨 峰 葡 萄 品 質 分 級 制 度 ， 只 是 葡 萄 品 質 和 官 能 測 定 的 評 分 比 例 各 佔 多 少 ， 仍 待 進 一 步 研 究 。

A preliminary Study on the Quality Grading of Kyoho Grape

Summary

　　This is a preliminary study trying to find the quality grading of Kyoho grape based on the result of testing quality and taste panel test. The testing quality items including color, size, weight, hardness, sweetness, acidity and sweet/sour ratio. The taste panel testing items including fruit appearance and eating quality.

　　A total of 250 samples were collected from Tatsuen, Tungshih, Cholan, Hsinshe and Hsinyi by randomly drawn grape samples in the summer production of 1988. Results indicated that the testing quality and taste panel test can be classified into good, fair and poor groups of Kyoho grape quality, and the testing quality item as color, size (or weight), hardness, sweetness and sweet/sour ratio, etc. can be used as the best indicator of Kyoho grape quality. Nevertheless, the method of Kyoho grape grading presented in this study seems to be applicable, but the quality of ratio between testing quality and taste panel test to set up the grading system of Kyoho grape should be further studied.
