土壤質地對稻米品質之影響

摘　　要

　　本 試 驗 以 台 農 67 號 及 台 中 秈 3 號 為 供 試 品 種 ， 分 別 種 植 於 大 甲 (砂 土) 、 溪 州 (黏 壤 土) 、 南 投 (黏 土) 、 台 中 (砂 壤 土) 等 四 個 地 點 。 同 時 將 上 述 四 個 試 驗 地 點 之 土 壤 搬 運 到 台 中 試 驗 地 ， 在 完 全 相 同 之 環 境 下 以 盆 栽 方 式 栽 培 ， 探 討 栽 培 條 件 對 稻 米 品 質 之 影 響 。 結 果 獲 知 ， 不 同 試 驗 地 點 所 生 產 之 稻 谷 ， 其 物 化 品 質 除 了 糙 米 率 及 鹼 性 擴 散 程 度 外 ， 完 整 米 率 、 白 米 透 明 度 、 腹 白 、 膠 體 展 流 度 、 直 鏈 性 澱 粉 含 量 及 粗 蛋 白 質 含 量 皆 有 顯 著 之 差 異 ， 而 食 味 亦 有 顯 著 之 差 別 ， 其 中 以 溪 洲 生 產 之 稻 米 最 好 吃 。 至 於 將 不 同 質 地 之 土 壤 搬 到 同 一 地 點 以 盆 栽 方 式 栽 培 ， 其 所 生 產 稻 谷 之 物 化 品 質 及 食 味 差 異 之 變 化 趨 勢 與 原 產 地 不 盡 相 同 ， 推 測 土 壤 質 地 雖 為 影 響 米 質 的 因 素 ， 但 當 地 的 氣 候 條 件 亦 可 能 影 響 米 質 的 好 壞 ， 且 其 影 響 力 可 能 大 於 土 壤 質 地 的 影 響 。

The Effect of Soil Texture on Rice Quality

Summary

　　The experiment were conducted at four locations to evaluate the effect of different soil textures (sandy, sandy loam, clay and clay loam soil) on rice quality. The soils taken from different places were filled in concrete containers of 70 cm x 70 cm x 60 cm in size and were placed in the farmer site of Taichung city. The rice grains produced from each treatment were analyzed for their qualities. The results showed that there were significant differences in percentage of head rice, white belly, translucency, gel consistency, amylose content, protein content as well as eating quality among the locations. In general, the grains produced from Sishu gave the best eating quality. Rice grains produced from pod cultures showed that the difference in rice quality was less than those grains produced from different locations. Therefore, soil character is not hte only factor which affects the rice quality, but others such as climate may be involved also.
