冬季蔬菜無機氮含量之研究

摘　　要

　　本 調 查 旨 在 探 討 本 省 秋 、 冬 季 市 售 主 要 蔬 菜 NO₃-N 及 NO₂-N 等 無 機 氮 之 含 量 ， 以 便 做 為 當 適 肥 培 及 提 高 蔬 菜 品 質 之 參 考 。

　　經 分 析 取 自 市 場 的 17 種 冬 季 蔬 菜 的 結 果 顯 示 ， 新 鮮 蔬 菜 中 NO₃-N 及 NO₂-N 之 含 量 隨 蔬 菜 種 類 ， 採 樣 時 間 及 食 用 部 位 而 有 差 異 ， 以 葉 菜 類 最 高 ， 根 莖 類 次 之 ， 花 果 菜 類 最 低 。 NO₃-N 佔 總 氮 量 之 21.9% 以 下 ， NO₂-N 則 甚 低 。 葉 菜 類 中 以 青 梗 白 菜 ， 小 白 菜 及 芥 藍 含 NO₃-N 量 較 高 ， 分 別 為 431 ppm ， 366 ppm 及 347 ppm ； 花 菜 及 果 菜 類 含 NO₃-N 之 量 均 不 高 ， 其 中 以 芫 萎 之 1.74 ppm 及 萵 苣 之 1.81 ppm 較 多 。 各 種 蔬 菜 所 含 之 無 機 氮 素 量 會 因 樣 品 來 源 不 同 變 異 極 大 ， 此 點 尚 待 進 一 步 之 探 討 。

A Study on the Contents of Inorganic Nitrogen in Winter Vegetable Crop

Summary

　　The vegetable samples collected from the markets in Taichung area were determined for their concentrations of NO₃-N, NO₂-N, and total-N. The results indicated that the levels of NO₃-N and NO₂-N in the vegetables were in the order of root and stem vegetable > fruit > edible flower. The average concentrations of NO₃-N in Pak-choi, Pak-tsai and Chinese kale were 430 ppm, 366 ppm and 347 ppm respectively. The NO₃-N in the cauliflower and fruit vegetables were in the range of 66 to 76 ppm. NO₂-N concentrations were found to be low in all vegetables e.g. 1.74 ppm in coriander and 1.81 ppm in lettuce.

　　The inorganic nitrogen concentration varied greatly among vegetables collected from different locations in Taichung area. Further studies are needed to clarify the causes of such variations.
