環境與稻米品質

摘　　要

　　稻 米 品 質 係 由 穀 粒 之 物 理 化 學 性 質 所 決 定 ， 而 穀 粒 之 物 理 化 學 性 質 ， 除 受 水 稻 品 種 特 性 之 影 響 外 ， 尚 因 栽 培 方 法 ， 水 稻 生 育 期 間 及 儲 存 環 境 等 之 不 同 而 發 生 變 化 。 水 稻 品 種 本 身 之 特 性 可 以 育 種 方 法 加 以 改 良 ， 而 調 整 栽 培 管 理 方 法 ， 改 善 收 穫 後 之 處 理 及 儲 存 時 的 環 境 亦 可 改 良 穀 粒 之 物 理 化 學 性 而 提 高 品 質 。 本 文 介 紹 水 稻 栽 培 管 理 方 法 、 栽 培 環 境 ， 及 收 穫 儲 存 之 環 境 變 化 對 米 粒 外 觀 ， 碾 米 性 質 、 顆 粒 性 澱 粉 及 蛋 白 質 含 量 等 諸 物 理 化 學 性 之 影 響 ， 並 說 明 這 些 物 理 化 學 變 化 與 稻 米 品 質 之 關 係 。

Effects of Envirnomental Factors on Rice Quality

Summary

　　Rice quality is determined by the physicochemical properties of rice grain which usually depends on grain appearance, milling quality, amylose, and protein content etc. These are the characteristics of rice varieties but are also influenced by the cultural practices as well as the envirn omental factors during the grain filling stage and storage period. The relationship among envirn omental factors and the physicochemic alproperties of rice grain including grain appearance, milling quality, amylose and protein content are discussed.
