長期施用菜籽粕肥料對稻米品質之影響

摘  要
   

   本試驗自 1995 年二期作開始執行,至 2000 年二期作止。在臺中區農業改良場試驗田進行田間試驗,探討長期以菜籽粕做為有機質肥料,對於臺農 67 號、臺中 189 號、臺稉 6 號、臺稉 9 號及臺中秈 10 號等五種水稻之稻米品質影響。一期作半有機及全有機栽培之碾米品質,均顯著優於化學栽培者。二期作全有機栽培,因每年均發生白葉枯病及紋枯病危害,致使榖粒充實程度較差,因此其碾米品質顯著較化學栽培者為差,半有機栽培則與化學栽培相同。白米直鏈澱粉含量在不同年度及不同耕作法間,並無規則可循,但二期作白米直鏈澱粉含量顯著高於一期作,顯示稻榖充實期間之溫度,應為影響白米直鏈澱粉含量之因子。經由逐步回歸分析顯示,影響米飯食味品質主要因子為白米粗蛋白質含量。試驗結果亦顯示全有機栽培,持續每公頃施用 4 噸菜籽粕 (1/2 基肥、 1/4 追肥及 1/4 穗肥 ) ,其白米粗蛋白質含量,均高於化學栽培之白米粗蛋白質含量,不利於食味品質的提昇。臺稉 9 號具有較高之碾米品質及最低之白米粗蛋白質含量,因此其食味品質最優。

Effects of Long Term Application of Rape Seed Meal on the Grain-Quality of Rice

ABSTRACT
 
   Field experiments were carried out on Taichung DARES from 1995 through 2000 to investigate the effects of long term application of rape seed meal on the grain-quality of five rice cultivars, i.e., Tainung 67, Taichung 189, Tai keng 6 and Tai keng 9 of Japonica type, and Taichung sen 10 of Indica type. Conventional, semi-organic and organic farming were conducted in this study. Experimental results revealed that organic and semi-organic farming had better milling quality than that of conventional farming on the first crop. On the second crop, organic farming had more serious bacterial leaf blight and sheath blight than conventional farming, that was the main effect factor resulted in organic farming had lower grain filling and milling quality than that of conventional farming, semi-organic farming showed no significant difference milling quality as compared to that of conventional farming. Temperature was the main effect factor of amylose content of milled rice during grain filling. Stepwise regression analysis revealed that crude protein content in grain is the main factor affecting the eating quality of cooked rice. The results also revealed that rape seed meal 2 ton/ha served as base fertilizers, 1 ton/ha served as top-dressing, and 1 ton/ha served at panicle initiation were successively practiced. Organic farming had higher crude protein content of milled rice than that of conventional farming and thus induce negative effect to eating quality. Tai keng 9 had higher milling quality and lowest crude protein content of milled rice than that of other cultivars thus had better eating quality.
