The vegetable cultivation area in the central region is 24,354 hectares, accounting for approximately 17.2% of the total vegetable cultivation area in Taiwan. Common vegetables include cruciferous vegetables such as cabbage, cauliflower, broccoli, cabbage, kale, and radish. etc.; Cucurbitaceous vegetables such as courgette, loofah, bitter melon, watermelon, etc.; Solanaceous vegetables such as tomatoes, bell peppers, peppers, eggplants, etc.; Legume vegetables such as kidney beans, peas, cowpeas; Alliumaceae crops such as green onions, leeks, etc. Garlic, onions, etc. With the development of the economy, the structure of the vegetable industry in the central region of Taiwan has also changed in line with the times. Through the accumulation of time, management and technology, a unique vegetable cultivation model has been formed, that is, there are many types of cultivation, a high repeat cropping index, cultivation in cold areas in summer, and cultivation in winter. Bulk vegetables and facilities for hydroponic and medium cultivation production, etc. In addition, there are also a large number of vegetable professional areas and production and marketing classes in the central region. The vegetable professional area covers a total area of ​​560 hectares and there are 353 vegetable production and marketing classes, of which 39.8% are distributed in Changhua County; 36.8% are distributed in Nantou County; and 25.6% are distributed in Taichung City.

The types of vegetables produced in the central region, according to the cultivation area of ​​individual crops, the top 10 types of vegetables are bamboo shoots, cabbage, green onions, wild rice shoots, cauliflower, tomatoes, watermelons, leeks, taro, leeks and carrots, among which wild rice shoots, leeks, Onions and other crops such as cauliflower and peas account for 86%, 74%, 39%, 95 and 45% of Taiwan's total planting area respectively, making them important local specialties in the region.

Cabbage Cabbage
The planting area of the central region of Taiwan cabbage is 2,705 hectares. The summer production areas in the middle part are mainly located in mountainous areas such as Heping District in Taichung City and Renai Township in Nantou County. The autumn and winter production areas are mainly located in Fangyuan Township, Erlin Town and Zhutang Township in Changhua County. All can be produced. Currently, the main cultivated varieties are 'Chuqiu' and 'Xuecui' for autumn and winter; '228' and 'Gaofeng' for summer. Water Bamboo is one of the important summer vegetables in Taiwan. The main production areas are Puli Town and Yuchi Township, Nantou County. The main production period is from May to October. The total production area is about 1,498 hectares. The main cultivated varieties are 'Qingke Zhong' and 'Taichung 1 Number', 'dare to be a species'. ‘Red shell type’ is a specialty vegetable from Waipu District, Taichung City.
 
Green onion Green onion
Green onions accounts for 1,789 hectares, in the central region of Taiwan with Fangyuan Township, Changhua County being the largest production area (537.4 hectares). Dajia District and Fengyuan District in Taichung City, Puyan Township, Erlin Town, and Xihu Town in Changhua County are also important production areas, with the main production period from December to February of the following year. The main cultivated varieties in the central part are 'Northern Onion' and 'Pink Onion'.

Cultivated edible bamboos in Taiwan can be mainly divided into Ma bamboo, green bamboo, black-legged green bamboo, Gui bamboo and Mengzong bamboo. The cultivation area in the central part is 3,702 hectares, with an annual output of 30,827 metric tons. Dakeng District, Taichung City and Huatan Township, Changhua County are the main production areas of bamboo shoots in the central part. It is mostly planted in mountainous areas and is an extremely extensive crop. With the improvement of cultivation technology, fresh edible bamboo shoots in some areas are cultivated with plastic sheeting or straw covering the soil to increase the ground temperature to facilitate the growth of bamboo shoots. In the central region, Fangyuan Township and Fuxing Township in Changhua County are the main production areas, with a planting area of ​​approximately 85.52 hectares and an annual output of approximately 2,118 metric tons. The main varieties are 'white-shelled large winter melon', 'green-shelled long winter melon', 'slender long winter melon' and 'taro winter melon'.
 
Chayote
Chayote eats its young shoots. Currently, the cultivated area in Taiwan is about 402 hectares. The main production area is Ji'an Township (180 hectares) in Hualien County. In the central region, Yuchi Township (17 hectares) and Xinyi Township (15 hectares) in Nantou County are the main ones. In the production area, it can be produced all year round, with April to October being the main production period. Currently, there are only two cultivated varieties in Taiwan, 'Green' and 'White', which can be further divided into thornless and thorny varieties.
