穗上發芽對稻米品質影響之研究 Ⅰ、噴水處理對穗上發芽之影響

摘　　要

　　為 明 瞭 稻 榖 成 熟 期 遭 遇 連 續 下 雨 所 導 致 之 穗 上 發 芽 ， 分 別 於 第 一 期 作 與 第 二 期 作 ， 利 用 人 工 噴 水 方 式 模 擬 連 續 下 雨 狀 況 。 第 一 期 作 之 發 芽 勢 與 發 芽 率 在 品 種 間 、 稻 榖 成 熟 度 間 及 噴 水 天 數 間 有 顯 著 差 異 ， 而 其 彼 此 間 也 有 顯 著 交 感 作 用 。 第 二 期 作 之 發 芽 率 在 稻 榖 成 熟 度 間 與 噴 水 天 數 間 有 顯 著 差 異 ； 發 芽 勢 則 僅 在 噴 水 天 數 間 有 顯 著 差 異 ， 而 品 種 × 稻 榖 成 熟 度 間 、 品 種 × 噴 水 天 數 間 也 有 顯 著 交 感 作 用 存 在 。 兩 個 發 芽 特 性 在 第 一 期 作 以 秈 稻 對 穗 上 發 芽 之 抵 抗 性 明 顯 高 於 梗 稻 。一 般 隨 稻榖 接 近 收 穫 期 ， 穗 上 發 芽 在 兩 個 期 作 皆 會 漸 趨 嚴 重 。 而 噴 水 天 數 之 處 理 在 兩 個 期 作 ， 皆 會 隨 天 數 之 增 加 而 使 得 穗 上 發 芽 程 度 明 顯 增 高 。

Effect of Sprouting on Rice Quality (I) Effect of Sprinkling Treatment on Sprouting of Rice Grain

Summary

　　This study was to evaluate the effect of sprouting due to continuous raining during grain maturity stage of rice grain. The experiment was simulated the raining conditions by artificial sprinkling in 1st crop and 2nd crop. The results indicated that speed of germination and percentage of germination of rice grain in 1st crop were reached very significant difference among varieties, among grain maturity stages, and among sprinkling days, and so were their interactions. Percentage of germination showed very significant difference among grain maturity stages and among sprinkling days in 2nd crop, so was the speed of germination among sparkling days. The significant interaction was occurred on speed of germination between variety and grain maturity stage, speed of germination between variety and sprinkling day. The same interaction results were also found on percentage of germination between variety and grain maturity stage. Only the variety showed significant difference in 1st crop as the treatment effect on characteristics of germination. It was indicated that the indica type had more resistance to sprouting than that of japonica. The levels of sprouting were increased as the increase of grain maturity stages and sprinkling days in two crop seasons.
