省產薏仁品質之檢定

摘　　要

　　本 試 驗 旨 在 探 討 屬 於 Mayuen 種 之 台 中 選 育 一 號 薏 苡 精 白 種 仁 與 屬 於 Major 種 之 市 售 由 泰 國 進 口 之 薏 仁 或 嘉 義 縣 阿 里 山 原 產 之 薏 仁 間 之 差 異 。 經 化 學 分 析 結 果 顯 示 ， 台 中 選 育 一 號 因 含 較 高 量 之 蛋 白 質 (18.3%) ， 澱 粉 (58.0%) 及 脂 肪 (6.6%) ， 因 此 其 每 100 公 克 之 熱 含 量 389.5 Cal 亦 最 高 ， 其 次 為 泰 國 產 之 374.5 Cal 及 阿 里 山 產 之 367.6 Cal 。 再 者 ， 台 中 選 育 一 號 之 每 公 克 的 氨 基 酸 含 量 為 193.4 mg 遠 高 於 阿 里 山 產 之 132.1 mg 各 泰 國 產 之 79.9 mg ， 尤 其 是 台 中 選 育 一 號 之 Glutamic acid, Alanine, Leucine 及 Lysine 含 量 亦 高 於 其 餘 品 種 之 數 倍 且 台 中 選 育 一 號 之 Lysine 含 量 高 達 11.7% ， 遠 高 於 一 般 禾 本 科 飼 料 作 物 ， 台 中 選 育 一 號 之 直 鏈 性 澱 粉 含 量 為 1.3% ， 泰 國 產 者 為 3.4% ， 阿 里 山 產 者 為 19.4% ， 顯 示 台 中 選 育 一 號 最 具 糯 性 ， 阿 里 山 產 者 為 非 糯 性 種 。 台 中 選 育 一 號 之 含 鐵 質 0.028% 為 泰 國 產 或 阿 里 山 產 之 9～14 倍 。 又 泰 國 產 及 台 中 選 育 一 號 之 維 生 素 B₁ 、 B₂ 含 量 相 似 ， 但 阿 里 山 產 者 較 低 。 就 具 有 抗 腫 瘤 藥 效 之 薏 仁 脂 含 量 而 言 ， 台 中 選 育 一 號 為 141.6 mg/gm 遠 高 於 泰 國 產 之 83.8 mg/gm 及 阿 里 山 產 之 60.7 mg/gm 。 據 此 可 知 屬 Mayuen 種 之 台 中 選 育 一 號 品 質 較 優 ， 值 得 進 行 栽 培 推 廣 。

Studies on the Varietal Differences of Chemical Components of Job's-Tears (Coix lacryma-jabi L.)

Summary

　　This experiment is aimed to identify the varietal differences among three Job's-tears varieties by ways of chemical components analysis. Three cultivars i.e. Taichung S. No. 1, A-Li Shan and Thailand were involved in this study. The Former one is the pedigree of variety Mayuen and the last two were from variety Major. The contents of moisture, protein, amino acid composition, starch, amylose, fat, fiber, ash, mineral composition, vitamin B₁, B₂, and coixenolide (C₃₈H₇₀O₄) in polished grain of three cultivars were analyzed.

　　The results revealed that Taichung S. No. 1 contained 18.3% of protein, 58.0% of starch and 6.6% of fat which provided the 389.8 Cal/100 gm of the highest calorie content among them, and that in Thailand was 374.5 Cal/100 mg and in A-Li Shan was 367.6 Cal/100 mg. The total amino acid content measured from Taichung S. No. 1, Thailand and A-Li Shan were 193.4 mg/gm, 79.9 mg/gm and 132.1 mg/gm respectively. As comparison with others, Taichung S. No. 1 obtained higher contents of Glutamic acid, Alanine, Leucine and Lysine, especially in 11.7% of Lysine content will promote it to be a good fodder crop.

　　Based on the amylose content, among Taichung S. No. 1 (1.3%) Thailand (3.4%) and A-Li Shan (19.4%), it could divide them into two groups, Taichung S. No. 1 and Thailand belonged to glutinous Job's-tears and A-Li Shan was nonglutinous. Besides, Taichung S. No. 1 contained 0.028% of Fe₂O₃ Which is 9-14 times higher than others. However, vitamin B₁ and B₂ were quite the same in Taichung S. No. 1 and Thailand, but lower in A-Li Shan. Coixenolide is purified and identified to have anti-tumor effect and the component of this fatty acid were measured individually 141.6 mg/gm, 83.8 mg/gm and 60.7 mg/gm in Taichung S. No. 1, Thailand and A-Li Shan. Therefore, Taichung S. No. 1 is not only good in quality but also worthy of intensive cultivation.
